Cook about 5 minutes longer until sauce begins to thicken.</p><p>Pour berries into blender and blend until smooth. Add berry mixture, milk and chia seeds to large bowl and stir to combine. Pour into 4 individual serving bowls/jars and place in fridge overnight. </p><p>Add toppings right before eating. 									<p>These breakfast burritos are simple to prep and freeze so you&#8217;ll always have a healthy option for those hectic mornings. </p><p>I made a batch recently for a busy family with a brand new baby and the reviews are in&#8230; they&#8217;re mom, man, and kid tested and approved. </p><p><strong>Ingredients:</strong></p><ul><li>12 flour tortillas</li><li>12 eggs</li><li>2 medium potatoes</li><li>Veggies of choice: (I used 1 red bell pepper, 1 onion, and mushrooms)</li><li>Optional: meat (breakfast sausage/bacon)</li></ul><p><strong>Directions:</strong></p><p>If using, cook bacon/sausage in large pan and set aside to cool. In the same pan, sauté diced potato and veggies. Once potato is softened, add eggs and cook through. Allow everything to cool to room temperature (important step)! Assemble burritos and roll tightly in foil. Freeze in a single layer on a sheet pan for a few hours until frozen. After they are frozen, they can be stored in a zip top bag in the freezer up to 3 months. </p><p><strong>To eat:</strong></p><p>Unwrap and warm in the oven at 350F for about 30 minutes or until warmed through, or microwave 1-2 minutes, flipping half way through. Optional: add salsa or avocado to serve. </p>								</div>

									<p>These spicy guacamole sweet potato bites are nutritious, delicious, and simple to prepare.</p><p><strong>Ingredients:</strong></p><ul><li>1 medium sweet potato (makes about 15-20 crisps)</li><li>2 medium avocados &#8211; smashed</li><li>1/2 lime &#8211; squeezed</li><li>1/4 small onion &#8211; minced</li><li>1 clove of garlic &#8211; minced</li><li>1/4 red bell pepper &#8211; minced</li><li>Pinch of chili flakes, salt and pepper</li><li>Optional: jalapeño &#8211; seeded and minced</li><li>Chives- chopped for garnish</li></ul><p><strong>Directions:</strong></p><p><strong>Sweet potato crisps:</strong> slice medium sweet potato into 1/4&#8243; rounds, rub with a touch of olive oil and a sprinkle of salt. Bake 15 minutes at 400F, flip and bake another 10-15 minutes or until slightly crisp. Let cool. </p><p><strong>Spicy guacamole:</strong> In medium bowl, mix avocado, lime juice, onion, garlic, bell pepper, chili flakes, salt, pepper, and jalapeño (if using) until combined.
